Gingerbread

Gingerbread (...instead of fruit cake for the holidays!)
2 cups flour
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tbsp ground ginger
2 tsp cinnamon
1/8 tsp cloves
½ cup butter, softened
¼ cup sugar
¼ cup brown sugar
1 large egg
2/3 cups molasses
2/3 cup milk
Gather all the liquids: In a large mixing bowl cream the butter and sugars together for about 3 minutes on medium speed.
While you are creaming the butter and sugars together, in a separate bowl combine, flour, baking powder, baking soda, salt, ginger, and cinnamon. Whisk them together to fully combine. Set aside until ready to use.
Measure the milk and molasses together and set aside until ready to use. (I like to heat this mixture just a bit then stir them together.)
Once the butter and sugars are creamed together add the egg and blend thoroughly.
Alternate the dry ingredients with the milk until everything is fully incorporated.
Lightly spray a regular loaf pan with vegetable spray then dust it with flour.
Pour the batter into the loaf pan and place in a 350 degree oven for about 1 hour or until a toothpick or dry spaghetti comes out clean.
Serve and enjoy.
Garnish: Cream Cheese frosting with lemon flavoring or just home made whipped cream.
