so that they can produce Bigger, larger beef, pig, lamb or produce more milk lay more eggs and get bigger and then they pass it onto us. Go ahead and eat your that hormone cheeses and milk if you want to become bigger with health problems such as diabetes.

KALE, SUPER FOOD (EYES)

Kale could perhaps be called an ideal eye food, having 500 times more lutein+zeaxanthin (these are in the human eye macula) than papaya, and 3 times more than spinach. Kale has more beta carotene than carrots even and than spinach too.   It also has 3.3 g of protein per 100 g, while spinach has 2.9, but spinach is higher quality protein.  Kale aminoacid score of 92 is higher than the 83 for broccoli, 85 for milk, 86 for lentils. It takes 3 minutes to cook kale with a pressure cooker, and that makes it far easier to eat and digest.

Beta carotene (also good for the eye) in spinach (5626 mcg), carrots (8285 mcg), kale (9226 mcg) is far higher than in papaya (276 mcg) or tomato (449 mcg).  Kale has more beta carotene than carrots, did you know that?  Kale basically trumps carrots from the point of view of beta carotene and the carotenoids in the human macula, lutein and zeaxanthin.  Tomatoes have 2500 mcg of lycopene, carrots 1 mcg, Papaya and spinach 0 mcg.  So tomatoes are key for lycopene. Spinach also has 7-8 times more Magnesium than tomatoes, carrots.  Kale has 3.5 times more Magnesium than tomatoes, carrots.  Magnesium is key to a healthy body. :)  Spinach has 9 times more Iron than tomatoes and carrots too.  :)  Iron is key also. :)  One problem with spinach though is high oxalic acid content if you eat it raw (if you steam or cook it, the oxalic acid is no longer there for the most part), so it's not recommended to eat RAW spinach daily a lot. :)  http://www.2ndchance.info/oxalate-dogChai2005oxalatecontentfoods.pdf explains that lentils for example have the lowest amount of oxalate among legumes, and it's much lower than RAW spinach per 100 grams. However, cooking spinach won't affect lutein, beta carotene, vitamin E, zeaxanthin, it actually can increase those slightly.  I do suggest eating kale, rather than spinach, as it has more omega 3 fatty acids, more lutein, more beta carotene.  Spinach is too rich in oxalate.

Note :  conventional kale and spinach have far more pesticides than organic ones, so cooking does help to reduce pesticide content, besides making it far easier to eat - especially kale.

LETTUCE EXTRACT KILLS LEUKEMIA CELLS

I've been ready a lot of researches on Lettuce. We use to think they're just green water. little nutritional value, but now, I've evolving and changed my mind the more I know. Just remember the laws of nature is that all plants have different parasite killing properties.

A water exact of common iceberg lettuce (which had been purchased at a local grocery store) was shown to kill up to 59% of human leukemia (HL-60) cells after 24 hours in this study. (I'm sure from my study's lettuce from organically grown seed is always better, if it has a bug in it, all the better its healthy ha ha)
The researchers noted that a person eating 3 kilograms of lettuce could theoretically achieve the required levels in their blood to suppress 50% of these leukemia cells. While this may seem to be a lot, don’t forget it’s to kill off established and aggressive cancer cells.
Cancer prevention requires much lower doses, and indeed normal levels of lettuce consumption have actually been linked to sharply reduced risks for several cancers in multiple population studies: 30% less breast cancer (dose: just one serving weekly), 60% less lung cancer, 70% less colon cancer, and 18% less stomach cancer (dose: 1-3 servings weekly) and 40-50% less non-Hodgkin’s lymphoma (dose: 5-7 servings weekly).
What makes lettuce so powerful? It’s rich in cancer-fighting compounds like chlorogenic acid, (green) caffeic acid, lutein, zeaxanthin and several powerful phtyostrerols. It also contains chicoric acid—an immune stimulant found in chicory and Echinacea. So put a leafy green salad back on your daily menu. Lettuce is low in calories (just 15 calories per serving!) and perfect as a simple salad, smoothies, sandwiches, and wraps of all types.

TOUGHER TIMES: THANKSGIVINGS

RE: TURKEY, "TOUGH TIMES" TRY CHCKEN! (from my Tougher Times blog)
A comment coming from Rivera, made me think:
"(Thanksgiving or Thanksgiving Day) (in North America) an annual national holiday marked by religious observances and a traditional meal including turkey. The holiday commemorates a harvest festival celebrated by the Pilgrims in 1621, and is held in the US on the fourth Thursday in November. A similar holiday is held in Canada, usually on the second Monday in October. Hmmm. There is no mention about the Native Americans here at all. LOL I am sure they could had say, "Thank you Native Americans for helping us learn how to grown food when we were dying the time we arrived to your land" JACINTO RIVERA
Actually they ate wild game...the turkey came much later.
Anyways I like what this G+ friend of mine said about Thanksgiving. People/readers forget I do blogs to help the poor and needy get through TOUGH TIMES. (That's the name of my blog, remember?)
My Mother, bless her heart, had a rough struggle though this earth life. She was mentally handicap (mentally challenged, haptic whatever,) to about a 9-12 year old level. She did develop before her death to about 16 yr old. Mom was perfect in her religion and her mom too never said a unkind about anything. They never stole; lied, whined, cried or bemoaned anything or any body. I never appreciated these characters until I left home and found everyone else had one or two.
My step-father could not read nor write. But, could fix anything; plumbing, electric work, build house, fix cars and appliances and, move houses. When times got tough we all pitched in went in the fields of Arizona and picked cotton or, in summers, into Oregon fields, orchards and picked fruit or vegetables. All he had was what he had in his pockets, he never gripped or deserted us four kids. During these times we lived in parks and out of the trunk of our car that had all of our passion's.
Holliday was sometimes sparse. When one can't read nor write is limits level of intelligence just as it did in mom.
One year I remember some organization giving Mom her first turkey. She thought it was a big chicken but found out differently when it would never get done. That meat was bloody tough. We couldn't figure out why people like it.
We never had one again. We're now all grown and some have and some are in "Tough Times," and two are single and alone on the holidays. I don't want turkey. Chicken sounds OK. Wish my family would just bring me a holiday plate. (No one to cook for) The holidays can be mean, but I remember my parents ways, no wimping, whining. Buy, if you can something special for yourself. If you don't treat yourself nice no one else will. Happy Holliday's my friend. Tough Times may require a small hen this year. It will all be over soon.

Cleanse the Liver, Blood of Toxins'


The North American Indian's use to chewed on dandelion root right before battles. It was known to made them wild and madder than hell; ready to win any battle. So this remedy of straight strength dandelion root could be problem. If  fresh the root, depending on its age maybe too powerful as it can dump too much toxins into the blood stream too fast and that's what made them mean, angry and wilder. It is an excellent liver herb but, you may want to use a milder herb at first.  It's better in leaf or flower form in teas but watch for aggression symptom changes in personalities. Grapefruit juice is also for the liver as well as lemon juice in morning especially. Their are many more liver herbals not listed here. Do not use if sprayed, even if the grounds been sprayed with weed killer.

Phyllanthus debilis is a herbaceous plant coming in the Family Phyllanthaceae. It is called Pittawakka in Sanskrit. The plant is a liver toner
and is used in the treatment of Hepatitis in Ayurveda. It has no side effects at all.
Wash out the entire plant with roots and crush it in a mortar. Do not add water. Tie it up into a small bag in a smooth piece of cotton cloth.
Put the bag in pure Goat milk and boil. When the milk cools to luke warm, squeeze the bag well and add into the milk. Discard the residue
with the cloth. Drink this milk early morning in empty stomach. The liver is got enlivened and it is a medicine for Hepatitis. It can be used
even when one is taking allopathy drugs for Hepatitis, for that matter any other diseases.

Addendum:
Today, there are many ways to reduce cholesterol and fats in the blood and very often people choose natural ways. Here is a recipe for natural drink that cleanses blood vessels and improves blood circulation:
Ingredients:
  • 3 liters of water
  • 1 kg of lemons
  • 1 packet of baking soda
  • 5-6 parsley bunches
Preparation:
First, wash the lemons in cold water and then soak them in warm water. Pour the packet of baking soda and let it sit for about an hour (this will clean all pesticides from lemon peel). In the meantime, wash the parsley and chop into small pieces. After an hour, put everything in a pot and add three liters of water. Cook it over low heat for 2-3 hours until you get about 1.5 liters of syrup. You should drink it (a small cup) every morning on an empty stomach and thus, the amount of the syrup can last about 15 days.

Antoniou, who does human gene therapy research in King’s College London, said that although the long-term consequences of the GMO soy diet are not known, it "could lead to liver damage and consequently general toxemia."

FREE OPEN SEEDS INITIATIVE

A group of scientists and food activists is launching a campaign Thursday to change the rules that govern seeds. They're releasing 29 new varieties of crops under a new "open source pledge" that's intended to safeguard the ability of farmers, gardeners and plant breeders to share those seeds freely.

It's inspired by the example of open source software, which is freely available for anyone to use but cannot legally be converted into anyone's proprietary product.
At an event on the campus of the University of Wisconsin, Madison, backers of the new Open Source Seed Initiative will pass out 29 new varieties of 14 different crops, including carrots, kale, broccoli and quinoa. Anyone receiving the seeds must pledge not to restrict their use by means of patents, licenses or any other kind of intellectual property. In fact, any future plant that's derived from these open source seeds also has to remain freely available as well.
Irwin Goldman, a vegetable breeder at the University of Wisconsin, Madison, helped organize the campaign. It's an attempt to restore the practice of open sharing that was the rule among plant breeders when he entered the profession more than 20 years ago.
"If other breeders asked for our materials, we would send them a packet of seed, and they would do the same for us," he says. "That was a wonderful way to work, and that way of working is no longer with us."
These days, seeds are intellectual property. Some are patented as inventions. You need permission from the patent holder to use them, and you're not supposed to harvest seeds for replanting the next year.
Even university breeders operate under these rules. When Goldwin creates a new variety of onions, carrots or table beets, a technology-transfer arm of the university licenses it to seed companies.
This brings in money that helps pay for Goldman's work, but he still doesn't like the consequences of restricting access to plant genes — what he calls germplasm. "If we don't share germplasm and freely exchange it, then we will limit our ability to improve the crop," he says.
Sociologist Jack Kloppenburg, also at the University of Wisconsin, has been campaigning against seed patents for 30 years. His reasons go beyond
Goldman's.
He says turning seeds into private property has contributed to the rise of big seed companies that in turn promote ever-bigger, more specialized farms. "The problem is concentration, and the narrow set of uses to which the technology and the breeding are being put," he says.
Kloppenburg says one important goal for this initiative is simply to get people thinking and talking about how seeds are controlled. "It's to open people's minds," he says. "It's kind of a biological meme, you might say: Free seed! Seed that can be used by anyone!"
The practical impact of the Open Source Seed Initiative on farmers and gardeners, however, may be limited. Even though anyone can use such seed, most people probably won't be able to find it.
The companies that dominate the seed business probably will keep selling their own proprietary varieties or hybrids. There's more money to be made with those seeds.
Most commercial vegetable seeds are hybrids, which come with a kind of built-in security lock; if you replant seed from a hybrid, you won't get exactly the same kind of plant. (For this reason, some seed companies don't bother getting patents on their hybrids.)
John Shoenecker, director of intellectual property for the seed company HM Clause and the incoming president of the American Seed Trade Association, says his company may avoid using open source seed to breed new commercial varieties "because then we'd ... have limited potential to recoup the investment." That's because the offspring of open source seeds would have to be shared as well, and any other seed company could immediately sell the same variety.
The initiative is probably more significant for plant breeders, especially at universities. Goldman says he expects many plant breeders at universities to join the open source effort.
Meanwhile, two small seed companies that specialize in selling to organic farmers — High Mowing Organic Seeds in Hardwick, Vt., and Wild Garden Seed in Philomath, Ore., are adding some open source seeds to their catalogs this year.

GREENS: DETOXIFER'S AND CANCERS

Greens – These foundational foods should be eaten in large amounts. The consumption of raw greens have been proven to reduce cancer rates in more than 200 separate scientific studies. In each of our cells is a DNA sequence called the antioxidant response element, Nrf2. It’s like the protective force field around the “Starship Enterprise.” (Exceptions is GMO greens)
 Our cells have this anticancer force field which is fueled by green vegetables. And the greens that have the most powerful fuel for the cells protective function are cruciferous vegetables. Good examples are collard greens, Brussels sprouts, broccoli, arugula, cabbage and bok choy (aka Chinese cabbage/ pak choy). The protective compound is called Isothiocyanate, (ITC).
As we chew these types of vegetables, a beneficial protective enzyme is released from the vegetables’ cell walls before we swallow. This enzyme is also released when we chop or blend the vegetable.


 In a recent medical study, men who ate 28 servings of vegetables a week decrease their instance of prostate cancer by 33%. However if they ate just three servings of cruciferous vegetables a week they decrease their instance of prostate cancer by 41%.
Another study showed that women who ate cruciferous vegetables daily, decreased breast cancer deaths by 62% compared to women who did not eat cruciferous vegetables. And this decrease in deaths from breast cancer also included women who were already diagnosed with breast cancer.

Examples such as fresh ORGANICALLY GROWN garden kale is best, and is easily grown, just cut tops back with scissors and a new crop will follow. Grow organic seed in the spring, Kale or Swiss Chard, next to a rock foundation it will grow through-out winter. Many like kale better than spinach because it's doesn't that bitter after taste (alkaloids.) Store bought kale tastes is not a mild as the variety as you'll grow in your garden. Don't let it get as big as store variety and it will be soooo tender and delicious. If the plant's smaller you can even put the tender leaves in a salads. Add it to drinks, stews or soups, especially with lamb, a excellent combination. Every family should grow

Studies show boiling decreases the level of cancer compounds, however steaming or stir frying doesn't result in significant loss. (Use other brassica vegetable for more cancer properties) Kales is also a source of indol-3carbinol, a chemical boost that repairs cells.

EGGPLANT CURES SKIN CANCER (Dr. Oz show)

The latest new is an ingredient for cancer in eggplant. An extract phytochemical called solasodine glycoside, or BEC5. EGGPLANT RECIPE: Makes: 4 servings Prep: 30 mins

Cook: 10 mins

Ingredients
  • 1 large eggplant (about 1 3/4 pounds), cut lengthwise into 8 slices
  • Salt and pepper
  • 4 large eggs
  • 3/4 cup store-bought pesto
  • 2 1/2 cups bread crumbs and/or flour
  • 6 tablespoons extra-virgin olive oil
  • 3/4 cup ricotta cheese (or another)
  • 1/3 cup grated pecorino-romano cheese (i.e.)
  • 1 cup store-bought marinara sauce (or, sub.)
Directions
  1. Season the eggplant with salt and pepper. In a wide, shallow bowl, whisk together the eggs and 4 tablespoons pesto. Pour the bread crumbs & flour onto a large plate. Dip each eggplant slice into the egg mixture, then, coat with the bread crumbs.
  2. Preheat the oven to 350 degrees ;. In a large nonstick skillet, heat 2 tablespoons olive oil over medium-high heat. Working in batches, cook the eggplant until golden, 2 minutes on each side, using the remaining 4 tablespoons olive oil. Transfer the eggplant to a paper-towel-lined baking sheet.
  3. In a small bowl, combine the ricotta and 3 tablespoons pecorino-romano; season with salt and pepper. Spread 1 tablespoon of the remaining pesto on each eggplant slice and top with about 2 tablespoons of the cheese mixture. Roll up each slice. Bake until the eggplant is tender when pierced with a toothpick, about 10 minutes.
  4. Meanwhile, in a small saucepan, bring the marinara sauce to a simmer. Serve the roll-ups with the sauce and remaining pecorino. (or, sub Chief Boy Ar'De pizza sauce)

STOMACH ULCERS REMEDY (H-pylori bacteria)

HOW TO REMOVE PESTICIDES FROM PRODUCE

How to remove pesticides/chemicals (Five worst offenders) Pesticides were made for war to kill our enemy. Then these were deluded down to kill bugs...but too many pesticides chemicals can kill us eventually or harm you defense mechanism in your body and cause diseases.
First: Soak fruit about 2 minutes in vinegar and water or make this formula up to keep on the counter.
1 cup water and 1 cup vinegar, add in baking soda and ½ lemon. Pour it in a spray bottle for the removal of chemicals from fruit and vegetables.
The worst offenders of pesticides are the following.
Straw berries (50 pesticides)
Apples (40 different pesticides,) plus wax that keep them on the peel.) If you can't smell the apple that's you sign it's waxed too much. Wax is a carcinogens chemical and was removed from milk carton.
Spinach, says USDA, has about 40 pesticides. Buy blanched frozen spinach that actually has less pesticides than fresh.
Peaches, 60 pesticides _The biggest offender of pesticides residues because of the soft fuzzy skins, better to buy organic when possible. Scrub with brush and spray with the above spray.
Some skins fruit and vegetables are a better buy, however, remember if the farmer does any spraying, followed by rain or watering, the water will seep up into the inside of the produce.
If you put peaches in boiling water till the skin is hot it will be easier to peel the problem off. Don't for get to have cold, or ice water to keep the fresh flavor. (about 2 min.)

In our grandmothers time when life was more simple and clear cut we were told to eat the peel, keep it on the fruit or potato, but today it may be a good idea to peel it. Especially if cucumbers or apples have wax on them in which its impossible to get off except to peel it off. And who wants to eat wax that hold the pesticides on the plants fruit.

Medical Uses of Cabbage Family

It is said the cabbage juice will purify the G I tract and kills most strains fungi, parasites and other pathogens. Instructions are to drink this juice (1/2 cup juice and; finish filling cup with water) 2 to 3 times per day. Cover with cheese cloth, gauze or stocking and let stand at room temperature X 3 days. Strain to separate juice and; pulp. Place cultured cabbage juice in refrigerator.

Monoamine oxidase (MAO) inhibitors. Monoamine oxidase (MAO) inhibitors are drugs used to treat depression. They inactivate naturally occurring enzymes in your body that metabolize tyramine, a substance found in many fermented or aged foods. Tyramine constricts blood vessels and increases blood pressure. If you eat a food such as sauerkraut which is high in tyramine while you are taking an natural MAO inhibitor, The result may be a hypertensive crisis???


The cabbage family (high sulfa foods) now includes, plants like the kale, the common vegetable the kohlrabi, the cauliflower, the broccoli, and the Brussels sprouts, all of which are very familiar and have been derived from the wild cabbage. Zucchini Feta Pancakes

Zucchini Feta Pancakes
4 cups packed grated zucchini
4 beaten eggs white (peaked)
1 heaping cup finely crumbled feta cheese
1/2 cup minced scallions
3/4 teaspoon mint or 1 tbs fresh
salt and black pepper to taste
1/3 cup flour
Butter for frying with a little olive oil so not to burn as it also enhance the vegetables.
Place the grated zucchini in a colander or bowl, and salt, squeezing out all the excess water.
combine squeezed zucchini, eggs, scallions, flour and spices and mix well.
Beat the eggs whites till they form a soft peak and fold into the mixture.
Fry in butter, on both sides. Don't turn till cooked golden and crisp.
Serve topped with sour cream or yogurt.
Or, great for late night, brunch with or with out a tablespoon of maple syrup. I've also used no protein cream soup as a gravy over them too for a change.

Veggie PopStickers

Veggie Pop Stickers (be organic whenever possible making them more tasty, nutritious, and healthy medicine.
3 tablespoons vegetable oil
1 onion, green onion or leek, cleaned and thinly sliced
1 clove garlic, pressed
1 head Napa cabbage, finely shredded (You can sub. other cabbages or "Dole's" finely chopped pkges)
2 tablespoons rice wine vinegar
2 teaspoons soy sauce
1-inch piece fresh ginger, peeled and grated
1 medium carrot, grated very fine
24 won ton wrappers
Asian Dipping Sauce, fish sauce recipe, or just use your own sauces.
Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the leeks and garlic and cook until leeks or onion begins to soften, about 3 to 4 minutes. Add in the cabbage, vinegar, soy sauce, and ginger stir and cook until cabbage is soft, about 3 to 4 minutes more. Remove from the heat and stir in the carrot. Allow the filling to cool.

It's possible to not pre-cook the above (except leeks). Just chop, mix, and transfer to the cabbage mixture. (But the srinking is different)
Transfer cabbage mixture to a mixing bowl and work together until fully incorporated. Keep them seperated in refrigerated until ready to use.
To make the pot stickers, lay a won ton wrapper on the work surface and put about 1 tablespoon of the filling in the center. Dip your finger in a little water and wet the edges of the won ton wrapper; this will help the pot sticker seal when cooking. Bring the outside edges of the won ton wrapper together over the filling and press it together to form a pouch. Continue with the remaining wrappers and filling. (Read direction on won ton wrappers.)
To cook the pot stickers, heat the remaining mono oil in a very large skillet over high heat. Place the entire pot stickers upright in the pan and cook, without disturbing them until browned on the bottom, about 1 to 2 minutes.

After cooked add 1/2-cup water to the pan and immediately cover. Allow the pot stickers to steam for about 3 minutes, and then remove the skillet lid. Continue cooking until the water is completely evaporated.
Transfer to a platter and serve with a dipping sauce.
Asian Dipping Sauce:
1/4 cup light soy sauce
2 tablespoons rice wine vinegar
1/2-inch piece fresh ginger, peeled and finely grated
1 teaspoon sugar
1/2 teaspoon toasted sesame oil (or good mono oil)
1/2 lemon, zest ed
Stir all ingredients together in a small bowl until sugar is dissolved. Refrigerate until ready to serve.
Yield: about 1/3 cup
Use my Won ton recipe for pot sticker (especially any left-over which can be frozen and later used here). They are easy and very good exchange. Add the bean threads if available it makes them so light.
Note: you can add fish, organic tofu, other meat substitutes or meat to most of my recipes but if you do make sure the meat is organically grown and grass fed. Of course they will not be Veggie Pot Stickers!

Broccoli Salad (Cancer)

Did you hear Pat Robinson of 700 club News (2009) say that if ,as pregnant mother, ate broccoli three times a week she would change the genetics of her baby and this child would not get cancer? (changing genes) humm... Make sure you get some good recipes.

I make an exceptions for pasta especially, when it compliments a good vegetable like broccoli, which has natural "sulphorophane's" an anti fungal cancer. Family's that eat these vegetable don't produce cancers as the ones that teach a dislike to their children. Its one of the best veggie God gave us for medicine. I do recipes only in this blog only to teach...about the healing nature of fresh ,in season foods.

In this one I uses Safflower oil. (Olive Oil) The Safflower flower, herb is the substitute for Saffron, which help to eliminate the fat out of the body along with the uric acids and toxins, depending on how it produced of course. It helps with any pain in arthritis and diabetic neuropathy. Buy an Italian package dressing mix following the package direction using safflower oil. The bottled dressings have to many preservatives and corn syrups.
Broccoli Pasta Salad
2 cups Rotini pasta
2 cups fresh broccoli florets (Watch carefully, do not over cook)
1 cup diced tomatoes or halved cherry tomatoes etc.
1/4-cup ripe sliced olives (or more it adds the salt)
1/3 cup Italian dressing (Follow packaged directions, use safflower oil. (More or Less)
1/4 cup grated Parmesan (topping) (and optional)
Cook pasta as directed on package, add broccoli to pasta during the last two minutes of pasta's cooking time; drain in medium bowl.
Add remaining ingredients; mix lightly, top with topping, and refrigerate and chill for several hours.
*Or another topping, is roasted Pine Nuts at 325 for 5 minutes. Spray Pam on pan first.
*Save the stem for vegetable broths. Freeze in a veggie bag. Vegetable broths are good in-between meals, cutting down on hunger but not on nutrition. I have frozen bags like this in the freezer for all the odd vegetable used that month, and then used on a semi fast day once a month.
Remember whole grains pasta products are complex foods and digest more slowly and are better for blood sugars problems.

Broccoli contains particular chemicals that are known to prevent cancer.

Caution: Broccoli reduces iodine absorption. If you eat it more than 3 times a week you should ensure your iodine intake. (Great if your allergic to fish however.)
Six years ago, researchers found that men who ate two or more half-cup servings of broccoli per week had a 44 percent lower incidence of bladder cancer compared to men who ate less than one serving each week. Now researchers have isolated compounds from the vegetable that they believe are responsible for this effect.
They isolated compounds called glucosinolates from broccoli sprouts, which have been found to also fight breast cancer and ulcers. During chopping, chewing and digestion, these phytochemicals morph into nutritional powerhouses called isothiocyanates--compounds that are believed to play a role in inhibiting cancer.
In the experiments, the isothiocyanates hindered the growth of bladder cancer cells--and the most profound effect was on the most aggressive form of bladder cancer they studied.
While young sprouts naturally have higher concentrations of these phytochemicals than full-grown broccoli spears, eating the spears also provides health benefits.
This isn't the only broccoli compound that may have anti-cancer benefits; the researchers say there are at least a dozen other interesting compounds in broccoli that could affect various types of cancer. Not a broccoli fan? Broccoli isn't the only cruciferous veggie with health benefits, the plant's kin, which include cabbage, cauliflower, Brussels sprouts and kale, may all contain similar disease-fighting phytochemicals.

Broccoli Pasta Salad

I usually am not much for pasta's. My mother never cooked such, but I do make exceptions especially when it compliments a good vegetable like broccoli, which has natural "sulphorophane's" family that are anti fungal cancer foods. In this one I uses Safflower oil. . The Safflower flower, herb is the substitute for Saffron, which help to eliminate the fat out of the body along with the uric acids and toxins. Helps with any pain in arthritis and diabetic neuropathy. Buy an Italian package dressing mix following the package direction using safflower oil. This page is to educate mostly, to use broccoli regularly in good diets. Make Cream of broccoli soup or find recipes to facilitate using it more in children's diets so they will like it. It's the (Mom's) that cooks and ruins their tastes for broccoli.
Broccoli Pasta Salad
2 cups rotini pasta
2 cups fresh broccoli florets (Watch carefully, do not over cook)
1 cup diced tomatoes or halved cherry tomatoes etc.
1/4-cup ripe sliced olives (or more it adds the salt)
1/3 cup Italian dressing (Follow packaged directions, use safflower oil. (More or Less)
1/4 cup grated Parmesan (topping) (and optional)

Cook pasta as directed on package, add broccoli to pasta during the last two minutes of pasta's cooking time; drain in medium bowl.
Add remaining ingredients; mix lightly, top with topping, and refrigerate and chill for several hours.
Garnishes:
*Or another topping, roast Pine Nuts at 325 for 5 minutes. Spray Pam on pan first.
*Save the stem for vegetable broths. Freeze in a veggie bag. Vegetable broths are good in-between meals, cutting down on hunger but not on nutrition. I have frozen bags like this in the freezer for all the odd vegetable used that month, and then used on a semi fast day once a month.
*Pasta: Follow directions on package. Be careful not to overcook.
Remember whole grains pasta products are complex foods and digest more slowly and are better for blood sugars.

Broccoli (Brassica oleracea)
Broccoli contains particular chemicals that are known to prevent cancer. (An excellent anti fungal if those properties haven't been mess with and mostly removed (GMO).
It is also rich in many nutrients such as calcium, vitamin C, folic acid and iron.
Health benefits
Since the broccoli is rich in dietary fibers it can reduce the risk of cancer, especially colon cancer.
Its high levels of vitamin E, vitamin C and beta-carotene provide us with a good intake of anti-oxidants, which help reduce risk of heart disease and stroke.
It is rich in iron and folic acid that helps to combat anemia. These nutriments, especially folic acid, are very important for women who want to have a child. Folic acid reduces the risk of having a baby with Spina bifida.
Caution: Broccoli reduces iodine absorption. If you eat it more than 3 times a week you should ensure your iodine intake. However, if your allergic to fish or fish iodine products...eat broccoli.
Six years ago, researchers found that men who ate two or more half-cup servings of broccoli per week had a 44 percent lower incidence of bladder cancer compared to men who ate less than one serving each week. Now researchers have isolated compounds from the vegetable that they believe are responsible for this effect.
They isolated compounds called glucosinolates from broccoli sprouts, which have been found to also fight breast cancer and ulcers. During chopping, chewing and digestion, these phytochemicals morph into nutritional powerhouses called isothiocyanates--compounds that are believed to play a role in inhibiting cancer.
In the experiments, the isothiocyanates hindered the growth of bladder cancer cells--and the most profound effect was on the most aggressive form of bladder cancer they studied.
While young sprouts naturally have higher concentrations of these phytochemicals than full-grown broccoli spears, eating the spears also provides health benefits.
This isn't the only broccoli compound that may have anti-cancer benefits; the researchers say there are at least a dozen other interesting compounds in broccoli that could affect various types of cancer. Not a broccoli fan? Broccoli isn't the only cruciferous veggie with health benefits, the plant's kin, which include cabbage, cauliflower, Brussels sprouts and kale, may all contain similar disease-fighting phytochemicals.

Broccoli & Cheese Quiche

BROCCOLI AND CHEESE QUICHE (Simple, basic, method recipe)
4 eggs
1/2 cup of raw milk or organic heavy cream
(about) 1 lb of steamed broccoli, crumbled into pieces
salt and pepper to taste
cheddar and garlic Colby cheese, finely cubed
1 pie-crust

Whisk eggs with milk, salt and pepper.
Steam broccoli until tender (minced) then add cheese into egg mixture.
Pour into pie crust and bake in a preheated 350º oven until an inserted knife comes out clean.
You can broil it for a few min. if not golden brown on top?
