Chips and Chili Casserole: (semi home made method)

No time to cook? Want something fast and nutritional? Try this very nice semi homemade casserole. Its fresh vegetables make it a tasty dish so don’t skimp on the fresh veggies. This is a method recipe, meaning it may have variations depending on the veg. on hand. You can substitute "the can; no bean style" or whatever brand you like, Western Family, Hormel, mild or hot, i.e. or, make your own. Then complement it by adding in your left-over meats, crumbled soy protein sold in store that taste like meat or just use corn tortilla that have been first fried/baked as you layering them as in making lasagnas. I've just piled the chips as a crust on the bottom of a Spam sprayed 9x12 dish. It's a good recipe that's handy to use left-over tortes that's has crumbled in the bottom of the bag.
Chili Bean Casserole
White Tortes Chips
1 Can Chili Beans vegetarian or a little meat in their flavoring (Your favorite)
1 cup Cheese (grated)
1 Tomato (diced)
1 Onions (chopped) and/or green onion as garnishment
1 Avocado (diced)
Optional is hot sauce, salsa, diced olives, or diced chili peppers
Sour Cream (as garnish)
In small baking dish or pan spray with olive oil. Cover bottom of dish with about ¼ inch of crushed tortes chips (or, corn chips.) The next layer is a can of chili beans mixed with a *can of water or tomato juice i.e.,) With some of the onions over torte’s chip spread evenly is an optional garnish. Top it with a layer of cheese and bake until bubbly, at 350 or until its heated thoroughly and the tops cheese is melted but not burnt.
Cover while baking with tin foil so not to burn (depends on oven.) Let cool a bit; before serving add a layer of *fresh tomato, avocado and/or green onions.
*If no fresh tomatoes keep hand in your pantry a small can whole tomatoes and omit the water or juice; crush tomatoes in your hand before adding IN THE DISH.)
Cool
Top with sour cream or, the sour cream can be in a side dish to add in last minute.
Some salsa can be added to this dish if no *fresh tomatoes and fresh or frozen corn, peppers, olives i.e.
Serve over fresh chopped salad greens. Squeeze over the top lime, olive oil; fresh spinach, parsley; or a salad dressing if no sour cream.
Serves about 6
The recipe is easily adapted for more servings if used company dish. You can use Frito's-corn chips if out of tortilla chips.
